Baked Eggs

I made baked eggs this morning, and it was quite possibly one of the most delicious things I have ever eaten.  And one of the simplest to make.

They are super simple to make: 2 whole eggs or 3 egg whites (in a mini ramekin) + some sour cream + swiss cheese + freshly grated garlic + kosher salt + freshly ground black pepper.  Bake at 350 for about 20 minutes until the whites are set and it is starting to bubble.  You can make all kinds of variations, add herbs, different kinds of cheeses.  Later this week I am going to try it with homemade pasta sauce.

Basic Tomato Sauce Recipe

Tomato Sauce is so easy to make I will never buy it from the store again- and it’s so much tastier!

Basic Tomato Sauce:

A splash of extra virgin olive oil

1 28oz can of whole peeled tomatoes in their juices…. can the best quality you can, I like San Marzano

1 can of tomato pasta, if you’d like a thicker sauce (better for pizza, just the whole tomatoes + EVOO is fine for pasta)

If you’d like to fancy it up a bit:

Red Garlic Flakes

Basil

Some red wine

Garlic

Whatever your heart fancies…

Heat the EVOO in a medium saucepan over medium heat…. add in the whole tomatoes and heat the mixture up for a few minutes till the sauce is hot.  Crush the the tomatoes against the side of the pan with a wooden spoons.  You can also run the tomatoes (and their juices) through the food processor if you don’t want as chunky of a sauce.  Simmer a few minutes and enjoy!

Chocolate Covered Strawberries

I made these for a bridal shower the other week… they were a huge hit.  They are super simple to make, so let me share what to do (and what not to do).

What you need: strawberries and chocolate.  Ignore the heavy cream, more on that later.  If you would like to drizzle it with white chocolate, pick up some of that also.  I picked up a few bars of Ghiradelli semi-sweet baking chocolate.  Normally I am a milk chocolate kinda girl, even in chocolate chip cookies, but I didn’t want them to be too sweet.

To begin, melt the chocolate in a glass bowl double boiler on the stove.

So I was researching tips on making chocolate covered strawberries and I read somewhere to add heavy cream to the chocolate as it would give it a nice sheen.

Fail.  It turned into a complete brick, and no amount of heat would get it to liquefy again.

Round 2.  I ran back across the street to Safeway (having a grocery store directly across the street from my house is beyond convenient) and started them again, sans heavy cream.

It’s fairly self-explanatory, I grabbed them by the stems and dipped them in the chocolate.

I had some extra Wilton white melting candies (the kind you put in molds) so I just melted it and drizzled it over the puppies.

Voila.  Beautiful.

Pigs In Blankets

Of all the dishes I’ve ever made for a party/ pot luck/ get together, Pigs in Blankets is by far the most popular thing I’ve ever made.  Not to mention the easiest a cheapest.

Ready for the recipe: Mini cocktail wieners + Pillsbury Crescent rolls.  Bake at 350 till they are done.  The end.

If you want to fancy it up a bit, you can use puff pastry (yum) or add cheese.  I thought about adding some chive and onion cream cheese this time but I chickened out… I have a feeling that would be delish.

This iPhone photo makes them look kinds nar-sty, but trust me, they are always the most popular dish at any party I bring them to!

Table Design Contest

This weekend I participated in a table design contest at the Virginia Association of Bridal Consultants annual meeting.  I didn’t know until a week before whether or not I was going to actually be able to go to the meeting so I held off on working on my table till the last minute.  I think it still came out ok though!

A while back I saw (I think on The Knot) a table from a wedding reception where they had individual cakes as the centerpieces.  I loved that idea and I had been wanting to do it for a while.  Plus, that meant I could by the cake stand I had wanted for a long time and write it off as a business expense!

If I had more time I would have called around to get someone to donate some pretty china and glassware for the table.  I liked what the hotel was able to provide though (the Sheraton Reston); I think it didn’t overpower the pretty centerpiece.

The beautiful flowers were donated by Shelley at Shelley’s Floral Enterprise.  There were gorgeous and everyone loved the idea of having flowers around the base of the cake plate!  The pink table cloth was donated by Gala Cloths.  I made the cookie favors but I forgot to snap a close up picture of them- they actually had names written on them (so they acted as the place cards and the favors).

I made the cake myself, if I wanted to I could have found someone to donate a cake, but I really wanted to test drive my new pastry bag and try this new frosting recipe.  {It was delicious, but VERY rich!}.

So I thought it would be a fun idea to put the table number on the cake with icing.  It was, but the butter cream frosting and the icing I used to write the number warmed up after being out of the fridge and by the end of they day the red icing was running down the sides and it looking like blood.  Not cute.

I LOVED the pattern on the napkins… I heard a rumor that they were from BBJ linens, I’ll confirm that when I can.  UPDATE:  They are from BBJ… I found them here.

Evenbake Cake Strips Part 2

The other day I mentioned how I finally bought Evenbake Cake Strips and I was anxious to see if they helped at all.

 

The Verdict:  Eh… not too impressed.  I think it did help the cake from making a huge dome, but the sides kind of curled up.

I left the cakes in the oven about 2 minutes longer than they should have been which I think contributed to the cracking on top.

The strips themselves also seemed like they were burning and I shouldn’t have left them in much longer.  The directions say to saturate them in water before putting them in the oven, which I did, but maybe not enough.  I did squeeze out some of the water so it wouldn’t be a drippy mess.

In the end, I will use them again, maybe leave them a little wetter and make sure to not  over cook my cake.

Evenbake Cake Strips

So happy to finally own these puppies… I’ve heard great things about them.  Evenbake cake strips supposedly help your cakes rise evenly.  I picked mine up at Sur la Table but you can find them on Amazon if you’d like to order them online.  You wrap them around the cake pans after soaking them in water.  I’m going to be using them this week to bake a cake to go in the cake dome that will be the centerpiece of my table design.  I will post pics once I bake the cake!

Christmas 2010

December was such a crazy busy month it left me beyond exhausted.  Here are a few belated pics!

I made a batch of The Pioneer Woman’s cinnamon rolls- it makes 7 whole pans.  Here is one without the delicious icing.

And PW’s Sugar Cookies.  Delish.

In lieu of a Christmas tree I hung ornaments on the Cherry Blossom tree in front of my house.  Last year was the first and last year I haul in a real Christmas tree on my own.  It was a pain in the butt and I’m not doing it again till I have a man in my life to do the work for me!

My family, including my two dogs and my sister’s dog traveled to the lovely Columbia, South Carolina for Christmas.  I love South Carolina, Columbia, and the south in general.

There you have it!  Hope you are recovered from the busy holiday season, I know I am still decompressing!

Banana-Chocolate Chip-Oatmal-Bran Muffins

You would think with so many main ingredients in a muffin, they wouldn’t taste good.  And they didn’t, so I won’t post the recipe.  They really weren’t that bad, just not as fluffy as I’d like…. they didn’t rise a ton and were very dense.

I really was craving a hearty bran-raisin muffin but decided to throw in some chocolate chips and bananas to a bran/ oatmeal recipe I found.  Will be doing things differently next time…
